They are introduced to the unique philosophy behind Rasmus’ holistic food, where dishes are called ‘impressions’ because they tell a story designed to evoke emotions from diners. Some comforting, some confronting, these impressions challenge the finalists to push their culinary boundaries.
In a short masterclass, the contestants gain insight into Rasmus’ culinary ethos and are tasked with creating their own impression for him to taste and critique. Ingredients that might typically be discarded, such as pig’s windpipes, cod jaw, and cow’s udders, are transformed into exquisite dishes, requiring the chefs to showcase their creativity and intuition.
But that’s just the beginning of their culinary adventure. The finalists are granted the rare opportunity to join Rasmus’ brigade of 25 chefs to execute a full restaurant service. Each chef will be responsible for crafting two impressions from an epic 50-course tasting menu. The pressure is on as they have only hours to prepare food that can take years to master.
